Existen varios relatos sobre ello; sin embargo, el que m\u00e1s me gusta es el del gran coctelero pisquero Hans Hilburg. El menciona que, durante la cosecha de vid en las antiguas haciendas, los propietarios divid\u00edan los racimos en primera, segunda y tercera, dejando lo \u00faltimo para el rebusque. Eran los peones o cholos, como se les llamaba, los que se quedaban con esta parte de la cosecha. Al d\u00eda siguiente, hac\u00edan el repaso de todos los campos y recog\u00edan los racimos y para llevarlos a la \u201coficina\u201d, lugar donde se elabora el destilado. Aquello resulto una exquisitez y cuando los due\u00f1os lo probaron se percataron de que las mezclas de uvas ofrec\u00edan Piscos de una calidad extraordinaria. Por ello, decidieron nombrar a esta combinaci\u00f3n \u201cAcholado\u201d en ingles blend.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-3385dfe9 elementor-widget elementor-widget-text-editor\" data-id=\"3385dfe9\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>\u00bfQu\u00e9 dice el Reglamento vigente de la Denominaci\u00f3n de Origen Pisco? Los Acholados son la mezcla de las variedades de uvas pisqueras menos arom\u00e1ticas con las m\u00e1s arom\u00e1ticas, asimismo, mezcla de Piscos y mezcla de mostos frescos o mostos fermentados de las diferentes uvas pisqueras, lo cual nos da un sinf\u00edn de posibilidades para elaborarlos. Es aqu\u00ed donde el maestro destilador usara su conocimiento y creatividad para lograr el mejor mix.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-inner-column elementor-element elementor-element-22cec4b6 minh-450\" data-id=\"22cec4b6\" data-element_type=\"column\" data-e-type=\"column\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<div class=\"elementor-element elementor-element-262a232b elementor-widget elementor-widget-text-editor\" data-id=\"262a232b\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Lo cierto es que hemos subestimado este tipo de Pisco, no les damos el valor que realmente tiene. Su riqueza se refleja no solo en la palabra \u201cAcholado\u201d que nos identifica, sino tambi\u00e9n en el nombre \u00abPisco\u00bb imposible de no reconocerlo como peruano. Es en ello donde debemos trabajar para reivindicar su importancia.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-39994af1 elementor-widget elementor-widget-text-editor\" data-id=\"39994af1\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>He escuchado decir que estas bebidas son producto de una mezcla que no le gusto al maestro destilador y para mejorarla achola varios Piscos de su bodega, el reglamento no lo impide, los Acholados son una de nuestras tantas fortalezas y debemos difundirlo. Si analizamos, en la mayor\u00eda de destilados similares no est\u00e1 permitida la mezcla..<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-667ff6ff elementor-widget elementor-widget-text-editor\" data-id=\"667ff6ff\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>En la cata hay opiniones distintas. Algunos consideran que ese tipo de Pisco no deber\u00eda participar en los Concursos Nacionales, las preguntas que surgen son: \u00bfC\u00f3mo lo evaluamos? \u00bfsobre las variedades? \u00bfQu\u00e9 debemos percibir durante la cata? Podemos saber exactamente cu\u00e1ntas variedades y cuales ha utilizado el productor. Recuerden que no hay l\u00edmite para acholar, se pueden usar las 8 uvas pisqueras con una salvedad: el Pisco de Uvina solo se puede producir en Lunahuana, Pacaran y Zu\u00f1iga en Ca\u00f1ete. Eso significa que un Acholado de 8 cepas solo podr\u00eda elaborarse en esos tres distritos.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-68aa0314 elementor-widget elementor-widget-text-editor\" data-id=\"68aa0314\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Regresemos a la interrogante de cu\u00e1les son los par\u00e1metros para la evaluaci\u00f3n de este tipo de Pisco. Mi referencia: la muestra debe estar sin defectos, correcto, equilibrada, adem\u00e1s, debo encontrar por lo menos dos aromas, uno a uva menos arom\u00e1tica y el segundo con m\u00e1s aroma. Tambi\u00e9n podr\u00eda ser al rev\u00e9s, la intensidad de los aromas no necesariamente juega a favor ni en contra. Esta, al final, es mi opini\u00f3n hedon\u00edstica en base a estos par\u00e1metros eval\u00fao y doy mi puntaje.
