Pure Quebranta from Bodega Santa Mar\u00eda Magdalena<br \/>(Pisco, Ica)<br \/>This typical Quebranta from Ica stands out for its freshness and<br \/>characteristic intensity. As they say, it \"hits the chest.\"<br \/>Far from being a flaw, this is a great quality. Quebranta pisco<br \/>always shows its strength: warm,<br \/>with an enveloping sensation that warms the palate.<br \/>On the nose, it offers notes reminiscent of the countryside, herbal nuances,<br \/>and a neutral but balanced and harmonious profile. Its persistence<br \/>is medium to long.  A \"selfish\" pisco that invites<br \/>you to enjoy it on its own. I pair it with pecan pie or<br \/>chocotejas (chocolate-covered treats).<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4f8f4c87 elementor-widget elementor-widget-text-editor\" data-id=\"4f8f4c87\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>2. Acholado (Blended), of Green Musts Piscos (Mosto Verde), \u2018Mollar-Italia\u2019 from Bodega<br \/>Monte Carmelo Azpitia (Lima)<br \/>This intriguing and well-executed blend masterfully showcases the interplay between the two grapes.The Mollar grape<br \/>takes center stage, while the Italia grape, despite being more aromatic,<br \/>steps back to achieve perfect<br \/>harmony.<\/p><p>In my opinion, the best Mollares and Italias come from<br \/>the Lima region, and this pisco proves it. I paired<br \/>this experience with a classic Do\u00f1a<br \/>Pepa nougat, savoring it bite by bite.<\/p><p>\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-33 elementor-inner-column elementor-element elementor-element-1dfb093a minh-450\" data-id=\"1dfb093a\" data-element_type=\"column\" data-e-type=\"column\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t<div class=\"elementor-widget-wrap\">\n\t\t\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<div class=\"elementor-element elementor-element-17aa3be2 elementor-widget elementor-widget-text-editor\" data-id=\"17aa3be2\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>3. Green Must (Mosto Verde), pisco Torontel grape \u2018Gold\u2019 from Bodega Vi\u00f1as de Oro<br \/>(Chincha, Ica)<br \/>An aromatic green must pisco that has left a lasting impression on me.<br \/>Even now, its persistence lingers on my palate,<br \/>lasting over 20 seconds. On the nose,<br \/>it reveals aromas of citrus fruits, orange blossoms, a hint<br \/>of cinnamon, and white fruits, achieving perfect balance.<\/p><p>On the palate, a slight tingle reminiscent of lime peel, unctuousness,<br \/>silkiness, with a subtle toast and prolonged persistence.<br \/>This pisco pairs wonderfully with panettone<br \/>(with a couple of drops added) or passion fruit mousse.<br \/>Whatever the accompaniment, it\u2019s always delightful.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-1b493d17 elementor-widget elementor-widget-text-editor\" data-id=\"1b493d17\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>4. Acholado (Blended), of Pure Piscos from Bodega El Huarango (Ica)<br \/>Acholados are a complex art. According to current regulations,<br \/>they must be made with more than one variety<br \/>of pisco grape. In this case, the label doesn\u2019t specify the varieties<br \/>used.<\/p><p>Some producers use up to seven different varieties. <br \/>Is it possible to identify so many during tasting? Probably not. <br \/>What truly matters is the quality of the distillate, the perception <br \/>of at least two grape varieties, the balance they achieve, and their freshness. <br \/>This pisco is best enjoyed with chocolate and l\u00facuma mousse,<br \/>accompanied by the smooth rhythm of good blues music.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-3e94bd81 elementor-widget elementor-widget-text-editor\" data-id=\"3e94bd81\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>In my opinion. These piscos are best savored pure<br \/>(neat), allowing their nuances to shine while enjoying the company of family or friends. I suggest<br \/>a tasting exercise: serve the pisco and ask your guests what they perceive on the first sniff. Take<br \/>notes and compare impressions at each stage. It\u2019s a fun and engaging way to enrich your olfactory memory. Remember, in tasting, there are no absolutes\u2014everything is open to interpretation. Cheers!
