Talking about pisco
In a conversation with several master distillers, discussing different topics and at one point we asked if we should have a pisco type within the regulations between the wineries with more production, let's say more than 50,000 liters per year, which we would call "industrial" and those with less, called "artisan". We still don't have this regulated. Another topic we discussed was that of pisco contest. Also I asked one of them, who works in a winery and produces more than 50,000 liters, why they did not submit samples to the pisco national contest? I told them that in my opinion they have several medal-winning piscos,, he answered that they only entered the Expo Pisco contest organized by Wong every year.This is because they consider that it is a fairer contest since the bottles are chosen from the supermarket shelves and the consumer benefits because they can access the winning piscos directly, something that does not always happen in regional or national contests, where the samples are not necessarily in the market. Once this is resolved, it is very likely that we will participate, commented.
We stayed talking about this topic of the contests and making history, the regional and national contests officially began in 1993 in Ica; the exact date programmed was May 15 and 16. It is interesting to see the regulations of the 1th Pure Pisco Competition,, I rescue these two titles: Of the classification Article 11 paragraph a). - The appreciation of the tasters will indicate the organoleptic quality of the product, according to the following score:
Appearance (view) and color 4 points
Nose, aromas 8 points
Taste, 8 points
Olor 8 puntos
Sabor 8 puntos
They also evaluate the score by alcoholic content as follows:
42º to 43. 9º (by distillation) 3 points
44º to 45. 9º (by distillation) 5 points
46º to 50º (by distillation) 4 points
44º a 45.9º (por destilación) 5 puntos
46º a 50º (por destilación) 4 puntos
Nowadays, according to the regulations of the Denomination of Origin Pisco of February 2011 (the valid one), piscos from 38º to 48º Vol. can be elaborated. Imagine the evaluations of the year 93, they did not consider piscos under 42º, those with higher Vol. degrees obtained higher scores, a subject to be discussed in a future article.
